I always find it hard to find recipes which are not only yummy but are healthy to serve at dinner parties. I have a love for brownies, i must admit they are probably one of the sweets i tend to give into. So instead of adding all those nasty but oh so delicious ingredients i have come up with the perfect guilt free brownie recipe!
The brownies turned out very moist and took approx 15 minutes prep time and 20 minutes baking time.
Ingredients:
3 tablespoons olive oil butter
1/2 cup organic carob or cocoa powder
1/3 cup almond milk
1 cup natural chopped dates
1 egg yolk and 3 egg whites
1/4 vanilla bean chopped
1 cup plain flour
1/2 teaspoon baking powder
1 cup any raw, chopped mixed nuts
Heat oven to 180 deg and line a 15 to 20cm slice tray and baking paper. Heat olive oil butter, carob powder, chopped dates and milk in a saucepan until butter disolves and dates become soft. Remove pan from heat and stir in 1 egg yolk and vanilla. Once mixed, stir in flour and baking powder until combined. With an electric mixer, whisk egg whites until soft peaks form. Combine egg whites with chocolate mixture, fold carefully until mixed through. Add nuts or any other dried fruit. Pour mixture into baking tray and place into the oven for 20 to 25 minutes. Remove from oven and place on a cooling rack for 15 minutes and enjoy!
