Metabolic Boosting Soup
Makes 5-6 freezable containers
x2 tins of organic diced tomatoes
x1 tin of organic chickpeas
x2 organic chicken breasts (diced)
500g Squid tubes diced (optional)
500g raw banana or tiger prawns (optional)
100g organic long beans
sprinkle cayenne spice
sprinkle turmeric spice
sprinkle salt and pepper
1 teaspoon red Thai curry paste
1 teaspoon garlic or garlic paste
4 cups of water
This is a spicy soup dish which is great for lunch or easy dinners during the week. It uses all clean ingredients and takes roughly 15 minutes to prepare. Easy right?
Start by dicing the two chicken breasts into bite size pieces and cooking through in a large stock pot with a touch of olive oil. Add the red Thai curry paste and garlic to the chicken and stir until the spice flavours come through. Lightly cook seafood in a separate pan, add to chicken once cooked. Add all remaining ingredients and simmer for half and hour. Cool and serve with brown or black rice.
