I have a much love for cooking and experimenting with different foods. Goji Berry’s are a member of the nightshade vegetable group which contains other vegetables such as sweet potato, eggplant and peppers. They are full of antioxidants, amino acids and protein. They are easy to bake with and sweet in flavour.
To make my Goji Berry Slice you will need:
3/4 cup goji berrys
1/2 cup natural sultanas
1/2 cup diced dates
1/2 cup olive oil butter or coconut butter
1/2 cup water
3 egg whits
3 egg yolks
1 teaspoon cinnamon
1/4 cup sunflower seeds
Slice tin – 20cm in size lined with baking paper
Method:
Turn oven onto 180 degrees celsius. Heat goji berrys, dried fruit, butter, water and cinnamon in a saucepan until butter has melted.
separate eggs and Whisk egg whites until soft peaks form. Add egg yolks to goji berry mix and stir until combined. Add egg whites to goji berrys and fold the whites into the mixture. Pour mixture into the slice tray and sprinkle with sunflower seeds. Place the slice into the oven for 15-20 minutes or until cooked through. Remove slice from tin and cool for 15 minutes before serving.
Other ingredients that work well with this recipe include chopped macadamias, honey, coconut and blueberrys.
