Chickpea and Spinach Frittas

Chickpea frittas

I love experimenting with frittas and patties. I often get bored with the usual meat patties so i had opted to use vegetarian ingredients for this recipe. If you prefer to cook with meat, you can substitute the chickpeas for chicken or beef mince.

1 can salt reduced chickpeas drained
1 cup spinach finely chopped
1 onion finely chopped
1 teaspoon garlic
1/4 cup fresh parsley chopped
1/4 cup almond meal
salt and pepper to taste

Cook chopped onion until translucent. Pour drained chickpeas into a bowl and roughly mash with a potato mash. Add cooked onion and remaining ingredients and stir until combined. Form fist size balls and transfer to a lightly oiled fry pan. Cook for 3-4 minutes each side. Sometimes i find that i need to bake the frittas for 10-15 minutes after frying to help harder the mix. You may find you need to do this aswell.

Serve with a green salad and olive oil.
